CHOOSING A WOK
Size
Consider the size of your family and stovetop. A 14-inch or 36-cm wok is suitable for a family of four to six. Make sure the wok does not block another pot on the next stove ring.
Weight
Heavier is better than light, regardless of material. If the base is made with a thicker metal, it is more durable and stable on the stovetop. But if you have weak wrists, you can choose a slightly lighter but solid wok that is easier to handle.
Shape
Rather than bowl-shaped, your wok should be shaped more like a boat, as this distributes heat more evenly. A concave wok with high sides directs steam to the centre of the wok. This results in overcooked food, especially vegetables. If you have an induction hob, go for a flat-bottomed wok. It is good for searing meats and making omelettes, but flipping food in it is not as effortless as in a round-bottomed wok.
