Award-winning Italian cuisine meets relaxed luxury at Capella Singapore's Fiamma
Designed by Andre Fu, Capella Singapore’s latest dining concept by famed chef Mauro Colagreco offers refined Italian fare in a rustic setting that embodies relaxed luxury.

Capella Singapore has joined forces with Hong Kong -based awardwinning hospitality designer Andre Fu and celebrated Italian Argentine chef Mauro Colagreco to present its latest restaurant, Fiamma.
Named after the Italian word for “flame”, Fiamma serves authentic, traditional Italian cuisine inspired by the Michelin-starred chef’s grandmother’s cooking. The menu promises to present the nostalgic and familiar, “set ablaze with rich, new flavours”.
The 138-seat restaurant itself occupies Capella Singapore’s former in-house restaurant’s long, crescent-shaped space that opens out to the greenery and the South China Sea beyond.
Like the menu, Andre’s design concept presents the blends of the familiar and the unexpected.
The alfresco lounge features a breathtaking view, the semi-private den is anchored by a wood fire pizza oven.
The main dining room features a large cast-bronze chandelier and a view of the glass-encased theatre kitchen.
Further into the floor plan is the private dining room that seats 16 pax, featuring timber rafters and mid-century inspired lamps.
Wrapping these spaces is the 30-metre-long terrace area is decked with hardwood outdoor furniture.
Uniting these diverse seating areas is the restrained colour palette comprising the colours of sand, terracotta, washed oak and dusty aubergine – restrained and yet effective in expressing an rustic yet elevated tropical resort concept.
Some highlights from the menu include the Crudo di Gambero Rosso, or the red prawn tartare naturally seasoned with citrus and served with kumquat and fava beans.
Pasta lovers will delight in Trofie al Pesto, twisted pasta native to Liguria, prepared with classic homemade pesto, dried tomatoes, and grilled calamari, and Linguine Alle Vongole E Bottarga , which features fresh clams, and lime and tomato sauce.
Two of the chef's pizza recommendations are the Diavola, featuring salami picante, mozzarella and pecorino cheese, topped with basil and The Genovese, which features melted parmigiano reggiano, mozzarella, with a homemade fresh pesto.
Finish on a sweet note with the dessert selections, such as the Meringa Cotta, a visual feast of perfectly airy méringue topped with gold flakes, berries, vanilla ice cream and fresh fruits.
Are you a traditionalist? The classic tiramisu, featuring mascarpone cream, biscuit, espresso and Amaretto, is a celebration of authentic Italian family dining you shouldn’t miss.
